Serves 4
- 4 bell peppers (any color)
- 1 cup crumbled feta cheese
- 1 15-ounce can black beans, drained
- ¼ cup cilantro, chopped
- 1 cup corn
- 2 cups cooked quinoa
- 1 tablespoon olive oil
Preheat the oven to 375°F. Cut the tops off the bell peppers and remove the seeds. Combine the remaining ingredients in a bowl and mix well. Divide the mixture evenly and stuff it into the peppers. Place the peppers in a baking pan, and bake for 25 minutes. Serve with a side salad.

About Dr. Tanaka:
Dr. Mary Tanaka graduated from UCLA with a degree in Mass Communications. She completed her master’s degree in Complementary and Alternative Medicine through the Department of Physiology at Georgetown University. She went on to earn her medical degree from Georgetown University School of Medicine. She finished her pediatric residency at UCLA Mattel Children’s Hospital with a focus on Community Health and Advocacy and served as Chief Resident.
