Serves 4
Salmon Tacos
- 2 6-ounce salmon fillets
- 8 corn tortillas
- 1 lime, cut into wedges
- 2 tablespoons olive oil
Mexican Spice Marinade
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon dried onion
- 1 teaspoon ground oregano
- ½ cup fresh cilantro
To prepare the fish: Prepare the marinade by mixing all of the spices in a large bowl and adding 2 tablespoons of olive oil. Cut the fish into ½-inch cubes and add to the marinade. Refrigerate the marinating fish for 1 hour. When ready to cook, put 2 tablespoons of olive oil in a pan over medium heat and add the fish. Cook for 10 to 12 minutes, stirring occasionally, until the fish has cooked through. Assemble the tacos by heating the corn tortillas in an ungreased pan or in the oven. Put a small amount of the fish on each tortilla and serve with the mango black bean salsa.
Mango Black Bean Salsa
- 2 small mangos or 1½ cups of defrosted frozen mangos
- 1 15-ounce can of black beans, drained
- ¼ medium onion (any color), finely diced
- 1 red bell pepper, finely diced
- ½ cup of fresh cilantro, chopped
- Juice of 1 lime
If using fresh mangos, peel the skin and slice the fruit off on either side of the seed. Cut the mangos into small pieces, approximately the same size as the peppers and onions. Mix all the ingredients together in a bowl and serve with the tacos.
